Founded by Costas Spiliadis in Montreal in 1979, the restaurant centres on philoxenia—the art of Greek hospitality—and pristine seafood flown in from the Aegean and Mediterranean.Diners begin with a guided walk through an open seafood market showcasing over 15 varieties of wild-caught fish and shellfish, then choose their preferred preparation: grilled, as sashimi, or baked in a golden sea-salt crust. Signature dishes include the Milos Special tower of crispy zucchini and eggplant, Lobster Pasta Athenian-Style, and Whole Fish Baked in Sea Salt. The 155-seat restaurant features marble from Athens, a 28-metre open kitchen, and Singapore's largest Greek wine list. Set lunches start from S$68++ on weekdays.

I had an amazing birthday dinner at Estiatorio Milos at Marina Bay Sands. The entire experience was exceptional from start to finish. A special thank you to Francesco and Mia for making the evening so memorable. Francesco gave excellent food recommendations — every dish we ordered was spot on. He was knowledgeable, attentive, and clearly passionate about the menu. Mia was equally warm and welcoming, and together they created such a comfortable and enjoyable dining atmosphere. What truly stood out was how interactive and engaging they were. The friendly conversations made the dinner feel personal rather than just another restaurant visit. It felt like we were genuinely taken care of. I’m truly glad I chose Estiatorio Milos to celebrate my birthday. Highly recommended for both the food and the outstanding service.
